Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 3 bananas (the riper the better)
- 2 cups all-purpose (plain) flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup walnuts (optional)
Instructions:
- Pre-heat oven to 325°F/160°C.
- Grease a loaf pan (coat lightly with butter/oil/spray)
- Cream butter and sugar together in a bowl, using a wooden spoon, ’til smooth. (It’s ok to melt the butter in the microwave a bit.)
- Add an egg and mix well.
- Peel bananas and break into bits. Mash them up with a potato masher – or a fork – on a plate. Add to butter/sugar/egg mixture.
- In a separate bowl, mix the dry ingredients: flour, baking soda, cinnamon and salt.
- Mix together wet and dry mixtures.
- If you’re adding nuts, now’s the time.
- Spoon/pour into greased loaf pan.
- Bake 1 hour, or until you can insert a toothpick/knife into the bread and it doesn’t come out in batter.
- Cool 10 minutes before removing from pan.
